Put everything except the cheese into a 2-3 quart casserole and cover.
Bake at 350 for about 1 ¾ hours, or till liquid is absorbed – stir a couple of times.
Remove cover, lay cheese over it, and cook for another 5 min to melt the cheese.
Serve with salsa (or even try heating the salsa for the last 5 min with the cheese).
*If you use the really tiny lentils, it cooks much faster.
NOTE: This dish is not beautifully colorful, but the flavor is always such a wonderful surprise!.
